Good Morning!
Welcome to the last two weeks of the grading quarter. It's a slog. I had 2-3 hilarious emails from parents whose student hadn't told them about their projects until last night (they s had them since before the snow days in January). One ended with "All he cares about is eating." I'm dying.
I worked on my Roman this weekend, only to realize it really will need handsewn hems. Bah, humbug. The phone interview went well, and I have a trial shift Friday night. I do get paid for that, so here's hoping I don't screw stuff up. I have mixed feeling about it-- it's low hourly wages, but they're close, local, and we're hiring. That is kinda the trifecta, right?
I made another batch of keto granola last night when I got home from my parents (dad made smoked sausage & shrimp, with peppers, onions, & tomatoes, over cauliflower for me and over grits for them). This time, I halved the butter and oil, used an egg white (not a whole egg), and added pumpkin seeds and pecans. It baked faster, is drier, and comes in at 385 cals for the same size serving (2.25 oz) and 4 net carbs. Then I knitted two rows for the remainder of Victoria, made my lunch, then put on my audiobook and folded all the laundry.
Today, 1.4 miles, bf was a serving of keto granola w/ 1/2 cup unsweetened almond milk, and another 1cup to drink with a little sf Torani. (IDK, but I wanted it.). Lunch is deli turkey and 1 slice Swiss on a lc tortilla with mustard, with celery sticks and 10 raspberries. Snack is the Oloves from KetoKrate and 1/5 ES dark chocolate. Dinner will be 4 oz carnitas, 1 svg broccoli soup, and 2 small almond flour biscuits.
Today is extended day at work, and I also need to add in a workout.
This week's agenda: Google form still broken; Abandon pants idea, start hemming the Roman. Knitting and/or weaving (four rows here or there). Make some kind of keto snack for this week.
